Pesto Shrimp and Couscous Packets

Ingredients
- 1½ lb peeled and deveined wild-caught raw shrimp
- ½ cup pesto
- 2 cups whole wheat Israeli (pearl) couscous
- 3 Roma tomatoes, cut into very thin slices
- ¾ cup crumbled feta cheese
Instructions
- Preheat oven to 425°F. Tear 6 sheets of heavy-duty foil each into an 18-inch square.
- Combine shrimp and pesto; set aside. Prepare couscous according to package directions.
- Divide couscous among foil squares. Top with tomatoes. Arrange pesto shrimp over tomatoes; sprinkle with cheese. Bring edges of foil up and over shrimp mixture, and fold together to enclose filling. Roll up ends of foil to completely close packets.
- Place packets in a single layer on a baking sheet. Bake 15 to 20 minutes or until shrimp are done.
