Pesto Shrimp and Couscous Packets

Ingredients

  • 1½ lb peeled and deveined wild-caught raw shrimp
  • ½ cup pesto
  • 2 cups whole wheat Israeli (pearl) couscous
  • 3 Roma tomatoes, cut into very thin slices
  • ¾ cup crumbled feta cheese

Instructions

  1. Preheat oven to 425°F. Tear 6 sheets of heavy-duty foil each into an 18-inch square.
  2. Combine shrimp and pesto; set aside. Prepare couscous according to package directions.
  3. Divide couscous among foil squares. Top with tomatoes. Arrange pesto shrimp over tomatoes; sprinkle with cheese. Bring edges of foil up and over shrimp mixture, and fold together to enclose filling. Roll up ends of foil to completely close packets.
  4. Place packets in a single layer on a baking sheet. Bake 15 to 20 minutes or until shrimp are done.
