Hash Brown Bowls
Cantaloupe and Red Grape TossIngredients
- 6 frozen hash brown patties
- 1 (8-count) pkg fully cooked sausage patties
- 12 large eggs
- 2 Tbsp butter
- 1 (8-oz) pkg shredded colby-Jack cheese
- 1 (16-oz) container fresh salsa
Instructions
- Cook hash browns according to package directions; break into large pieces, and divide among 6 shallow bowls.
- Cook sausage according to package directions; coarsely chop and divide among bowls.
- Beat eggs in a large bowl until combined. Melt butter in a large nonstick skillet over medium heat; add eggs and cook without stirring, until beginning to set on bottom.
- Lightly season with salt and pepper; cook, stirring constantly, until thickened and set. Divide among bowls and sprinkle with cheese. Serve with salsa.

- 2 cups seedless red grapes
