Salsa Verde Beef Tacos
Cilantro Lime Rice and Black Beans
Ingredients
- 1½ lb ground beef
- 1 (16-oz) jar salsa verde, divided
- 1 Tbsp ground cumin
- 18 corn tortillas
- 1 (8-oz) pkg shredded lettuce
- 1 (8-oz) pkg shredded colby-Jack cheese
- 1 (8-oz) carton sour cream
- 1 (8-oz) container guacamole
Instructions
- Cook beef in a large skillet over medium heat until browned and crumbly; drain, and return to skillet. Stir in 1 cup salsa and cumin; cook until thickened.
- Meanwhile, heat tortillas according to package directions.
- Serve beef mixture in tortillas with lettuce, cheese, sour cream, gucamole, and remaining salsa.

- 2 (8.8-oz) pouches microwavable long-grain white rice
- ¼ cup chopped fresh cilantro
- 1 Tbsp lime zest
- 2 (15-oz) cans black beans, rinsed and drained
Side Dish Instructions
- Heat rice according to package directions; stir in cilantro and lime zest; season to taste with salt and pepper.
- Heat beans according to package directions.
