Cilantro-Lime Pork Curry
Broccoli Cauli-Rice
Ingredients
- 6 (1-inch-thick) boneless pork chops
- 2 Tbsp avocado oil
- 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
- 1 cup light coconut milk
- 2 Tbsp mild curry paste
- 3 Tbsp chopped fresh cilantro
- 1 tsp fresh lime juice
Instructions
- Sprinkle pork lightly with salt and pepper. Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
- Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
- Return pork to skillet; simmer 5 minutes or until sauce is thickened and pork is done. Sprinkle with cilantro and lime juice.

- 1 (12-oz) pkg cauliflower florets
- 1 onion, chopped
- 1 Tbsp avocado oil
- 2 cloves garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- ½ lb broccoli, cut into small florets
- ¼ cup organic chicken broth
Side Dish Instructions
- Pulse cauliflower in a food processor until it resembles rice.
- Cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add garlic, salt, and pepper; cook 2 minutes. Stir in cauliflower, broccoli, and broth; cover and cook 15 minutes.
