Everything Bagel Breakfast Bake

Ingredients

  • 2 whole wheat bagels, cut into 2-inch pieces
  • 1 small red bell pepper, chopped
  • 1 cup chopped kale
  • ½ (2.5-oz) pkg fully cooked bacon, crumbled
  • 4 large eggs
  • ¾ cup milk
  • 2 oz ⅓-less-fat cream cheese, softened
  • ¼ tsp pepper
  • ½ cup shredded reduced-fat Cheddar cheese 
  • 2 tsp everything bagel seasoning

Instructions

  1. Layer bagels, bell pepper, kale, and bacon in a lightly greased baking dish.
  2. Whisk together eggs, milk, cream cheese, and pepper. in a large bowl; pour evenly over bagel mixture. Sprinkle casserole with cheddar cheese. Cover and chill overnight (see Note).
  3. Let casserole stand at room temperature 30 minutes. Preheat oven to 375°F. Bake 40 to 50 minutes or until set and golden brown. Serve casserole sprinkled everything bagel seasoning.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, halved
  • 1 (4.4-oz) pkg pomegranate arils (seeds)  

Side Dish Instructions

  1.  Toss together fruit in a serving bowl.
