Everything Bagel Breakfast Bake
Berry-Pomegranate TossIngredients
- 2 whole wheat bagels, cut into 2-inch pieces
- 1 small red bell pepper, chopped
- 1 cup chopped kale
- ½ (2.5-oz) pkg fully cooked bacon, crumbled
- 4 large eggs
- ¾ cup milk
- 2 oz ⅓-less-fat cream cheese, softened
- ¼ tsp pepper
- ½ cup shredded reduced-fat Cheddar cheese
- 2 tsp everything bagel seasoning
Instructions
- Layer bagels, bell pepper, kale, and bacon in a lightly greased baking dish.
- Whisk together eggs, milk, cream cheese, and pepper. in a large bowl; pour evenly over bagel mixture. Sprinkle casserole with cheddar cheese. Cover and chill overnight (see Note).
- Let casserole stand at room temperature 30 minutes. Preheat oven to 375°F. Bake 40 to 50 minutes or until set and golden brown. Serve casserole sprinkled everything bagel seasoning.

- 1 (16-oz) pkg strawberries, halved
- 1 (4.4-oz) pkg pomegranate arils (seeds)

- Toss together fruit in a serving bowl.
