Chili-Smothered Sweet Potato Fries

Ingredients

  • 1½ lb grass-fed ground beef
  • 1 carrot, diced
  • 1 small green bell pepper, chopped
  • 1 small onion, chopped
  • 1 Tbsp avocado oil
  • 1 (14.5-oz) can diced tomatoes
  • 1 (15-oz) can tomato sauce
  • 1½ Tbsp chili powder
  • 1 (8-oz) pkg shredded Monterey Jack cheese
  • 2 avocados, diced
  • 1 pint grape tomatoes, halved
  • 4 radishes, sliced

Instructions

  1. Cook beef, carrot, bell pepper, and onion in hot oil in a large Dutch oven over medium-high heat 10 minutes or until beef is browned and crumbly. Stir in tomatoes, sauce, and chili powder.
  2. Bring to a boil, reduce heat, and simmer 10 minutes.
  3. Arrange Sweet Potato Fries recipe on a large platter; spoon beef mixture over fries; sprinkle with cheese.
  4. Top with avocado, tomatoes, and radishes.

Side Dish Ingredients

  • 4 large sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 2 Tbsp avocado oil
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Cut potatoes into ½-inch-thick wedges.
  2. Combine potato wedges, oil, and salt on 2 rimmed baking sheets; toss.
  3. Bake 30 to 35 minutes or until tender, stirring once.
