Chili-Smothered Sweet Potato Fries
Sweet Potato FriesIngredients
- 1½ lb grass-fed ground beef
- 1 carrot, diced
- 1 small green bell pepper, chopped
- 1 small onion, chopped
- 1 Tbsp avocado oil
- 1 (14.5-oz) can diced tomatoes
- 1 (15-oz) can tomato sauce
- 1½ Tbsp chili powder
- 1 (8-oz) pkg shredded Monterey Jack cheese
- 2 avocados, diced
- 1 pint grape tomatoes, halved
- 4 radishes, sliced
Instructions
- Cook beef, carrot, bell pepper, and onion in hot oil in a large Dutch oven over medium-high heat 10 minutes or until beef is browned and crumbly. Stir in tomatoes, sauce, and chili powder.
- Bring to a boil, reduce heat, and simmer 10 minutes.
- Arrange Sweet Potato Fries recipe on a large platter; spoon beef mixture over fries; sprinkle with cheese.
- Top with avocado, tomatoes, and radishes.
Side Dish Ingredients
- 4 large sweet potatoes, peeled and cut into ½-inch-thick wedges
- 2 Tbsp avocado oil
- ½ tsp salt

- Preheat oven to 425°F. Cut potatoes into ½-inch-thick wedges.
- Combine potato wedges, oil, and salt on 2 rimmed baking sheets; toss.
- Bake 30 to 35 minutes or until tender, stirring once.
