Strawberry-Kiwi Smoothie Bowls
Ingredients
- ½ cup unsweetened flaked coconut
- 1 (16-oz) pkg frozen strawberries
- ¾ cup light coconut milk (or use your favorite milk)
- 1 tsp lime zest
- ⅓ cup fresh lime juice
- ¼ cup honey
- 4 kiwifruit, sliced
- 2 Tbsp chia seeds
Instructions
- Toast coconut in a nonstick skillet over medium-high heat 3 to 4 minutes or until fragrant.
- Process strawberries, coconut milk, zest, juice, and honey in a blender until smooth, scraping sides as needed.
- Pour into 4 serving bowls; top with kiwi, coconut, and chia seeds.
