Strawberry-Kiwi Smoothie Bowls

Ingredients

  • ½ cup unsweetened flaked coconut
  • 1 (16-oz) pkg frozen strawberries
  • ¾ cup light coconut milk (or use your favorite milk)
  • 1 tsp lime zest
  • ⅓ cup fresh lime juice
  • ¼ cup honey
  • 4 kiwifruit, sliced
  • 2 Tbsp chia seeds

Instructions

  1. Toast coconut in a nonstick skillet over medium-high heat 3 to 4 minutes or until fragrant.
  2. Process strawberries, coconut milk, zest, juice, and honey in a blender until smooth, scraping sides as needed.
  3. Pour into 4 serving bowls; top with kiwi, coconut, and chia seeds.
