Chicken, Bacon, and Ranch Quesadillas
Chips and Guacamole
Ingredients
- 1 (22-oz) pkg frozen diced cooked chicken breasts, thawed
- 1 (2.5-oz) pkg fully cooked bacon, chopped
- 1 (8-oz) pkg shredded colby-Jack cheese
- 1 (16-oz) bottle Ranch dressing, divided
- 6 burrito-size flour tortillas
Instructions
- Stir together chicken, bacon, cheese, and ⅓ cup dressing. Spread over one side of each tortilla. Fold tortillas in half.
- Cook quesadillas, in batches, in a large nonstick skillet coated with cooking spray over medium heat 3 to 4 minutes per side or until tortillas are lightly browned and cheese is melted. Cut into wedges, and serve with additional Ranch dressing.

- 1 (11-oz) pkg yellow corn tortilla chips
- 1 (8-oz) container guacamole
Side Dish Instructions
- Serve chips and guacamole on each plate.
