Sirloin Steak with Cilantro Sauce

Ingredients

  • 2 Tbsp finely chopped fresh cilantro
  • 2 Tbsp lite Italian dressing
  • 1 tsp lemon zest
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper
  • 1 small clove garlic, minced
  • 2 (4-oz) top sirloin steaks (about ¾-inch thick)
  • Juice of ½ lemon

Instructions

  1. Stir together cilantro, dressing, lemon zest, salt, red pepper, and garlic in a small bowl. Brush 1 Tbsp cilantro mixture over steak, and let stand 15 minutes.
  2. Heat a nonstick skillet over medium-high heat until hot. Coat skillet with cooking spray. Add steaks to skillet, and cook 4 minutes. Turn steaks, and reduce heat to medium. Cook 3 minutes or to desired doneness.
  3. Remove from heat and let stand 3 minutes before slicing. Spoon remaining cilantro sauce over steak, and drizzle with lemon juice.

Side Dish Ingredients

  • ¾ lb small red potatoes, cut in half
  • ½ lb broccoli florets
  • 1½ Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 small clove garlic, minced

Side Dish Instructions

  1. Arrange potatoes in a steamer basket over boiling water. Cover and steam 7 minutes; add broccoli to potatoes. Cover and steam 5 minutes or until potatoes are tender.
  2. Toss vegetables with remaining ingredients.
