Sirloin Steak with Cilantro Sauce

Ingredients
- 2 Tbsp finely chopped fresh cilantro
- 2 Tbsp lite Italian dressing
- 1 tsp lemon zest
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
- 1 small clove garlic, minced
- 2 (4-oz) top sirloin steaks (about ¾-inch thick)
- Juice of ½ lemon
Instructions
- Stir together cilantro, dressing, lemon zest, salt, red pepper, and garlic in a small bowl. Brush 1 Tbsp cilantro mixture over steak, and let stand 15 minutes.
- Heat a nonstick skillet over medium-high heat until hot. Coat skillet with cooking spray. Add steaks to skillet, and cook 4 minutes. Turn steaks, and reduce heat to medium. Cook 3 minutes or to desired doneness.
- Remove from heat and let stand 3 minutes before slicing. Spoon remaining cilantro sauce over steak, and drizzle with lemon juice.
Side Dish Ingredients
- ¾ lb small red potatoes, cut in half
- ½ lb broccoli florets
- 1½ Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- 1 small clove garlic, minced
Side Dish Instructions
- Arrange potatoes in a steamer basket over boiling water. Cover and steam 7 minutes; add broccoli to potatoes. Cover and steam 5 minutes or until potatoes are tender.
- Toss vegetables with remaining ingredients.
