Pork Chops and Apples

Pecan Bulgur and Steamed Broccoli

Ingredients

  • 2 (5-oz) bone-in pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp canola oil
  • 1 tart apple, sliced
  • ½ red onion, sliced
  • 1 clove garlic, minced
  • 2 Tbsp balsamic vinegar

Instructions

  1. Sprinkle pork with salt and pepper; cook in hot oil in a large skillet over medium heat 3 to 4 minutes per side or until done.
  2. Add apple, onion, and garlic to skillet; sauté 8 minutes or until apples are caramelized and onions are tender.
  3. Add vinegar; cook 2 minutes or until reduced slightly. Serve over pork.

  • ¼ cup chopped pecans
  • 1 cup water
  • ⅓ cup bulgur
  • ⅛ tsp crushed red pepper
  • ¼ tsp salt, divided
  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp light butter with canola oil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook pecans in a saucepan over medium-high heat 2 minutes or until toasted, stirring frequently; remove from pan.
  2. Add water, bulgur, and red pepper to saucepan; bring to a boil. Reduce heat to medium-low; cover and cook 12 minutes or until bulgur is tender. Stir in pecans and ⅛ tsp salt.
  3. Meanwhile, arrange broccoli in a steamer basket over boiling water. Cover and steam 4 minutes or until crisp-tender; toss with light butter and salt.
