Greek Flounder
Green Beans with Roasted Red Peppers and Garlic BreadIngredients
- 2 tsp extra-virgin olive oil
- ½ tsp dried Italian seasoning
- ⅛ tsp pepper
- 2 (4-oz) flounder fillets
- ¼ cup crumbled reduced-fat feta cheese
Instructions
- Preheat broiler. Combine oil, seasoning, and ⅛ tsp pepper in a small bowl. Place fish on a foil-lined baking sheet; rub seasoning mixture evenly over fish.
- Broil 4 minutes per side or until fish flakes easily with a fork. Sprinkle with feta.
Side Dish Ingredients
- 1 small red bell pepper, cut in half lengthwise
- ½ lb green beans, ends trimmed
- 1 Tbsp extra virgin olive oil
- ⅛ tsp salt
- 1 Tbsp light butter with canola oil
- 2 oz multi-grain Italian loaf bread, cut in half lengthwise
- ⅛ tsp garlic powder
Side Dish Instructions
- Preheat broiler. Place pepper, cut sides down, on a baking sheet coated with cooking spray.
- Broil 4 to 5 minutes or until tender and slightly charred. Let cool 5 minutes; cut into thin strips.
- Meanwhile, arrange green beans in a steamer basket over boiling water; cover and steam 6 minutes or until tender.
- Toss together green beans, peppers, oil, and salt in a bowl.
- Spread butter over cut sides of bread; sprinkle with garlic powder. Broil 1 to 2 minutes or until golden.
