Baked New Orleans "Barbecue" Shrimp
Roasted Green Beans and Parsley Rice
Ingredients
- ½ lb peeled and deveined, large wild-caught shrimp
- 2 tsp olive oil
- 1½ Tbsp lemon juice
- 2 cloves garlic, minced
- 1 Tbsp salt-free Cajun seasoning
- 2 tsp low-sodium soy sauce
- ⅛ tsp salt
- ¼ tsp pepper
- 2 lemon wedges
Instructions
- Preheat oven to 400°F Place shrimp in a 11- x 7-inch baking dish.
- Whisk together oil, lemon juice, garlic, seasoning, soy sauce, salt, and pepper. Pour over shrimp; toss.
- Bake 10 minutes or until shrimp turn pink. Serve with lemon wedges.
Side Dish Ingredients
- 1 (12-oz) pkg green beans
- 2 Tbsp olive oil, divided
- ⅛ tsp salt
- ⅓ cup instant brown rice
- 2 Tbsp chopped fresh parsley
Side Dish Instructions
- Preheat oven to 400°F. Toss together green beans, 1 Tbsp oil, and salt over a large rimmed baking sheet; spread in a single layer. Bake 12 to 14 minutes or until crisp-tender.
- Meanwhile, cook rice according to package directions; toss with 1 Tbsp oil and parsley.
- Serve green beans and rice alongside shrimp.
