Baked New Orleans "Barbecue" Shrimp

Ingredients

  • ½ lb peeled and deveined, large wild-caught shrimp
  • 2 tsp olive oil
  • 1½ Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 Tbsp salt-free Cajun seasoning
  • 2 tsp low-sodium soy sauce
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 2 lemon wedges

Instructions

  1. Preheat oven to 400°F  Place shrimp in a 11- x 7-inch baking dish.
  2. Whisk together oil, lemon juice, garlic, seasoning, soy sauce, salt, and pepper. Pour over shrimp; toss.
  3. Bake 10 minutes or until shrimp turn pink. Serve with lemon wedges.

Side Dish Ingredients

  • 1 (12-oz) pkg green beans
  • 2 Tbsp olive oil, divided
  • ⅛ tsp salt
  • ⅓ cup instant brown rice
  • 2 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together green beans, 1 Tbsp oil, and salt over a large rimmed baking sheet; spread in a single layer. Bake 12 to 14 minutes or until crisp-tender.
  2. Meanwhile, cook rice according to package directions; toss with 1 Tbsp oil and parsley.
  3. Serve green beans and rice alongside shrimp.
