Honey Mustard Pork Chops
Sweet Cucumber Salad and Garlicky Grilled CornIngredients
- 1½ Tbsp Dijon mustard
- 2 tsp honey
- 2 tsp balsamic vinegar
- ⅛ tsp pepper
- 2 (6-oz) bone-in pork loin chops (about 1-inch thick)
Instructions
- Preheat grill to medium-high heat. Combine mustard, honey, vinegar, and pepper in a small bowl.
- Grill pork chops, covered with grill lid, 5 minutes. Turn pork chops, and brush with half of mustard mixture.
- Grill, covered with grill lid, 4 to 5 minutes longer or until done. Brush pork with remaining half of mustard mixture. Let stand 3 minutes before serving.
Side Dish Ingredients
- 1½ cups thinly sliced cucumber
- ½ cup grape tomatoes, halved
- 2 Tbsp chopped onion
- 2 Tbsp apple cider vinegar
- 2 tsp sugar
- 1 tsp canola oil
- ⅛ tsp salt
- 2 ears corn, husks and silks removed
- 1 Tbsp light butter with canola oil
- 1 small clove garlic, minced
- Pepper
Side Dish Instructions
- Toss together cucumber, tomatoes, onion, vinegar, sugar, oil, and salt in a serving bowl; cover, and chill at least 15 minutes or up to 8 hours.
- Preheat grill to medium-high heat. Coat corn with cooking spray, and wrap individually in foil. Grill corn, covered, 15 minutes or until tender and charred, turning often.
- Stir together light butter, garlic, and pepper; spread over corn. Serve cucumber salad and corn alongside pork.
