Italian Tuna Melts
Easy Green Bean Packets and Orange Wedges
Ingredients
- 1 (5-oz) can albacore tuna in water, drained
- 1 jalapeño pepper, seeded and finely chopped
- 1 tsp dried basil
- 1 tsp capers, drained
- 1½ Tbsp olive oil
- 2 tsp red wine vinegar
- ⅛ tsp black pepper
- ⅓ cup grape tomatoes, quartered
- 2 light multigrain English muffins, split
- 2 (0.67-oz) slices reduced-fat provolone cheese, torn in half
Instructions
- Preheat broiler. Stir together tuna, jalapeño pepper, basil, capers, oil, vinegar, and black pepper in a bowl. Gently fold in tomatoes.
- Arrange English muffins, cut sides up, on a baking sheet; top with tuna mixture and cheese.
- Broil 2 minutes or until cheese is lightly browned.
Side Dish Ingredients
- 1 (12-oz) pkg green beans
- 2 tsp olive oil
- ½ tsp Italian seasoning
- ⅛ tsp salt
- 2 oranges, cut into wedges
Side Dish Instructions
- Preheat broiler. Spread green beans on a large piece of foil. Drizzle with oil, and sprinkle with Italian seasoning and salt. Seal packet tightly.
- Broil 15 minutes or until beans are crisp-tender.
- Serve beans and orange wedges alongside tuna melts.
