Smoky Baked Chicken
Roasted Artichokes with Walnuts and Thyme Rice
Ingredients
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (8-oz) boneless, skinless chicken breast
Instructions
- Preheat oven to 400°F. Combine paprika, oregano, salt, and pepper; rub over chicken.
- Place chicken in a baking dish coated with cooking spray. Bake 20 to 25 minutes or until done.
- Cut chicken breast in half.

- 1 (9-oz) pkg frozen artichokes, thawed and patted dry
- 1½ Tbsp extra virgin olive oil, divided
- 1 clove garlic, minced
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp chopped walnuts
- ½ tsp lemon zest
- ½ cup instant brown rice
- 1 tsp chopped fresh thyme
Side Dish Instructions
- Preheat oven to 400°F. Combine artichokes, 1 Tbsp oil, garlic, salt, and pepper on a large rimmed baking sheet.
- Bake 20 minutes, stirring once; sprinkle with walnuts and lemon zest.
- Meanwhile, cook rice according to package directions; toss with 1½ tsp oil and thyme.
