Roasted Artichokes with Walnuts and Thyme Rice

Ingredients

  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (8-oz) boneless, skinless chicken breast

Instructions

  1. Preheat oven to 400°F. Combine paprika, oregano, salt, and pepper; rub over chicken.
  2. Place chicken in a baking dish coated with cooking spray. Bake 20 to 25 minutes or until done.
  3. Cut chicken breast in half.

  • 1 (9-oz) pkg frozen artichokes, thawed and patted dry
  • 1½ Tbsp extra virgin olive oil, divided
  • 1 clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp chopped walnuts
  • ½ tsp lemon zest
  • ½ cup instant brown rice
  • 1 tsp chopped fresh thyme

Side Dish Instructions

  1. Preheat oven to 400°F. Combine artichokes, 1 Tbsp oil, garlic, salt, and pepper on a large rimmed baking sheet.
  2. Bake 20 minutes, stirring once; sprinkle with walnuts and lemon zest.
  3. Meanwhile, cook rice according to package directions; toss with 1½ tsp oil and thyme.
