Sirloin Steak and Green Bean Stir-Fry
Sesame Bok Choy
Ingredients
- 1 lb top sirloin steak, cut into ½-inch pieces
- 1½ Tbsp vegetable oil, divided
- 1 Tbsp dark sesame oil
- ½ (8-oz) pkg thin green beans, halved
- ¼ onion, thinly sliced
- ½ red bell pepper, thinly sliced
- ¼ cup sliced water chestnuts, drained
- ½ cup low-sodium beef broth
- 2 Tbsp low-sodium soy sauce
- 1 tsp cornstarch
- ¼ tsp crushed red pepper (optional)
Instructions
- Brown steak in hot vegetable oil in a large skillet over medium-high heat; remove from skillet, and set aside.
- Heat sesame oil in skillet over medium-high heat; add beans, onion, and bell pepper. Cook 6 minutes, stirring constantly; add water chestnuts.
- Whisk together broth, soy sauce, cornstarch, and, if desired, red pepper.
- Add steak and broth mixture to skillet. Bring to a simmer, reduce heat, and cook until sauce is slightly thickened and steak is done.
Side Dish Ingredients
- 1½ Tbsp dark sesame oil
- 1 Tbsp low-sodium soy sauce
- ½ Tbsp rice vinegar
- 4 cups chopped bok choy
Side Dish Instructions
- Whisk together oil, soy sauce, and vinegar in a bowl. Add bok choy, and toss. Cook in a nonstick skillet over medium-high heat until tender.
