Spanish-Style Shrimp

Herbed Spaghetti Squash "Noodles"

Ingredients

  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 Tbsp avocado oil
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 Tbsp tomato paste
  • ¼ cup sliced pitted green olives
  • 1 Tbsp capers
  • ½ tsp dried oregano
  • 1 lb peeled and deveined, large raw shrimp
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Sauté onion, garlic, and jalapeño pepper in hot oil in a Dutch oven over medium heat 5 minutes or until tender.
  2. Add tomatoes, tomato paste, olives, capers, and oregano; bring to a boil. Reduce heat, and simmer 10 minutes or until slightly thickened.
  3. Add shrimp and parsley. Cook 5 minutes or until shrimp turn pink. Serve over Herbed Spaghetti Squash "Noodles" recipe.

Side Dish Ingredients

  • 1 spaghetti squash
  • 1 Tbsp extra virgin olive oil
  • ½ Tbsp fresh thyme
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cut squash in half lengthwise, and remove seeds. Place squash, cut sides down, in a microwavable dish.
  2. Cover with plastic wrap; cut a small slit in plastic wrap. Cook at HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
  3. Remove spaghetti-like strands with a fork. Toss squash strands with oil, thyme, salt, and pepper.
