Italian Sausage Orecchiette Pasta

Ingredients

  • ½ (12-oz) pkg whole wheat orecchiette pasta (or use other whole-grain small shells)
  • ½ lb Italian chicken sausage, casings removed
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 1 cup baby spinach
  • ½ cup low-sodium chicken broth
  • 2 Tbsp freshly grated Parmesan cheese (or use shaved)

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook sausage, garlic, and red pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until sausage is browned and crumbly.
  3. Add spinach and broth, stirring until spinach wilts. Stir in pasta. Gradually add cheese, stirring until creamy, about 5 to 6 minutes.

  • ¾ lb Brussels sprouts, halved
  • 1 Tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together Brussels sprouts, oil, Italian seasoning, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 15 to 20 minutes or until tender, stirring after 10 minutes.
