Italian Sausage Orecchiette Pasta
Roasted Brussels SproutsIngredients
- ½ (12-oz) pkg whole wheat orecchiette pasta (or use other whole-grain small shells)
- ½ lb Italian chicken sausage, casings removed
- 2 cloves garlic, minced
- ¼ tsp crushed red pepper
- 1 Tbsp olive oil
- 1 cup baby spinach
- ½ cup low-sodium chicken broth
- 2 Tbsp freshly grated Parmesan cheese (or use shaved)
Instructions
- Cook pasta according to package directions; drain.
- Meanwhile, cook sausage, garlic, and red pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until sausage is browned and crumbly.
- Add spinach and broth, stirring until spinach wilts. Stir in pasta. Gradually add cheese, stirring until creamy, about 5 to 6 minutes.

- ¾ lb Brussels sprouts, halved
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together Brussels sprouts, oil, Italian seasoning, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 15 to 20 minutes or until tender, stirring after 10 minutes.
