Roasted Red Pepper Hummus Burgers
Sweet Potato Fries with Garlic MayonnaiseIngredients
- 1½ lb ground beef
- 1 cup gluten-free panko breadcrumbs
- ½ cup roasted red pepper hummus
- 6 slices mozzarella cheese
- 6 gluten-free hamburger buns, split
- ½ cup mayonnaise
- 1 tsp smoked paprika
- 1 (5-oz) pkg arugula
- 2 tomatoes, thinly sliced
Instructions
- Preheat grill or grill pan to medium-high heat. Stir together beef, panko, and hummus in a large bowl; season lightly with salt and pepper. Shape mixture into 6 patties.
- Grill patties, covered, 5 to 6 minutes per side or until no longer pink. Top with cheese slices, and grill 1 minute longer or until cheese is melted. Grill buns, cut sides down, 1 minute.
- Stir together mayonnaise and paprika; spread on cut sides of buns. Serve burgers on buns with arugula and tomatoes.

- ½ cup mayonnaise
- 2 tsp lemon juice
- 2 cloves garlic, minced
- ¼ tsp pepper

- Bake sweet potato fries according to package directions .
- Meanwhile, combine mayonnaise and remaining ingredients; serve with fries.
