Roasted Red Pepper Hummus Burgers

Sweet Potato Fries with Garlic Mayonnaise

Ingredients

  • 1½ lb ground beef
  • 1 cup gluten-free panko breadcrumbs
  • ½ cup roasted red pepper hummus
  • 6 slices mozzarella cheese
  • 6 gluten-free hamburger buns, split
  • ½ cup mayonnaise
  • 1 tsp smoked paprika
  • 1 (5-oz) pkg arugula
  • 2 tomatoes, thinly sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Stir together beef, panko, and hummus in a large bowl; season lightly with salt and pepper. Shape mixture into 6 patties.
  2. Grill patties, covered, 5 to 6 minutes per side or until no longer pink. Top with cheese slices, and grill 1 minute longer or until cheese is melted. Grill buns, cut sides down, 1 minute.
  3. Stir together mayonnaise and paprika; spread on cut sides of buns. Serve burgers on buns with arugula and tomatoes.

  • 1 (20-oz) pkg gluten-free frozen sweet potato fries
  • ½ cup mayonnaise 
  • 2 tsp lemon juice
  • 2 cloves garlic, minced
  • ¼ tsp pepper 

Side Dish Instructions

  1. Bake sweet potato fries according to package directions .
  2. Meanwhile, combine mayonnaise and remaining ingredients; serve with fries.
