Chicken Burritos

Ingredients

  • 4 frozen boneless, skinless chicken breasts, thawed and cubed
  • ½ (1-oz) envelope less sodium taco seasoning mix
  • 1 onion, chopped
  • 1 Tbsp canola or vegetable oil 
  • 4 burrito flour tortillas
  • 1 cup chopped romaine lettuce
  • 1 cup shredded Mexican blend cheese
  • ½ cup sour cream
  • ½ cup salsa

Instructions

  1. Sprinkle chicken with seasoning mix. Cook chicken and onion in hot oil 6 to 8 minutes or until chicken is done and onion is tender.
  2. Divide chicken mixture among tortillas; top with lettuce, cheese, sour cream, and salsa. Fold in sides of tortillas; roll up to completely enclose filling.

  • 1 cup instant brown rice
  • ½ (1-oz) envelope less sodium taco seasoning mix

Side Dish Instructions

  1. Cook rice according to package directions, adding seasoning mix to water.
