Chicken Burritos
Taco Rice
Ingredients
- 4 frozen boneless, skinless chicken breasts, thawed and cubed
- ½ (1-oz) envelope less sodium taco seasoning mix
- 1 onion, chopped
- 1 Tbsp canola or vegetable oil
- 4 burrito flour tortillas
- 1 cup chopped romaine lettuce
- 1 cup shredded Mexican blend cheese
- ½ cup sour cream
- ½ cup salsa
Instructions
- Sprinkle chicken with seasoning mix. Cook chicken and onion in hot oil 6 to 8 minutes or until chicken is done and onion is tender.
- Divide chicken mixture among tortillas; top with lettuce, cheese, sour cream, and salsa. Fold in sides of tortillas; roll up to completely enclose filling.

- 1 cup instant brown rice
- ½ (1-oz) envelope less sodium taco seasoning mix
Side Dish Instructions
- Cook rice according to package directions, adding seasoning mix to water.
