Classic Favorite
Blueberry Pancakes or Waffles
Ingredients
- 2 (7-oz) pkg blueberry muffin mix
- 1 cup frozen whole berries, thawed
- ⅔ cup milk or water
- 2 large eggs
- ⅓ cup pancake syrup
Instructions
- Preheat a large nonstick skillet or waffle iron to medium heat or per manufacturer directions.
- Combine muffin mix, berries, milk, and eggs in a bowl, stirring until small lumps remain.
- For pancakes, pour ¼ cup per pancake onto hot skillet. Cook until bubbles appear on surface, flip, and cook until lightly browned and done.
- For waffles, use ½ to ¾ cup batter depending on size of waffle maker. Cook until steaming stops. Serve with syrup.
