Blueberry Pancakes or Waffles

Ingredients

  • 2 (7-oz) pkg blueberry muffin mix
  • 1 cup frozen whole berries, thawed
  • ⅔ cup milk or water
  • 2 large eggs
  • ⅓ cup pancake syrup

Instructions

  1. Preheat a large nonstick skillet or waffle iron to medium heat or per manufacturer directions.
  2. Combine muffin mix, berries, milk, and eggs in a bowl, stirring until small lumps remain.
  3. For pancakes, pour ¼ cup per pancake onto hot skillet. Cook until bubbles appear on surface, flip, and cook until lightly browned and done.
  4. For waffles, use ½ to ¾ cup batter depending on size of waffle maker. Cook until steaming stops. Serve with syrup.
