Greek Quinoa Salad

Ingredients
- ½ cup quinoa, rinsed and drained
- 2 Tbsp red wine vinegar
- 2 Tbsp olive oil
- ¼ tsp dried oregano
- ¼ tsp garlic salt
- 1 (15.5-oz) can chickpeas, drained and rinsed
- 2 Roma tomatoes, chopped
- ½ cucumber, chopped
- ½ cup chopped green bell pepper
- ½ (2.25-oz) can sliced black olives, drained
- ½ (5-oz) pkg spring mix
- ⅓ cup crumbled feta cheese
Instructions
- Cook quinoa according to package directions; fluff with a fork.
- Whisk together vinegar, oil, oregano, and garlic salt in a large bowl. Stir in chickpeas, tomatoes, cucumber, bell pepper, and olives. Stir in quinoa. Serve over spring mix. Top with cheese.
