Greek Quinoa Salad

Ingredients

  • ½ cup quinoa, rinsed and drained
  • 2 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • ¼ tsp dried oregano
  • ¼ tsp garlic salt
  • 1 (15.5-oz) can chickpeas, drained and rinsed
  • 2 Roma tomatoes, chopped
  • ½ cucumber, chopped
  • ½ cup chopped green bell pepper
  • ½ (2.25-oz) can sliced black olives, drained
  • ½ (5-oz) pkg spring mix
  • ⅓ cup crumbled feta cheese

Instructions

  1. Cook quinoa according to package directions; fluff with a fork.
  2. Whisk together vinegar, oil, oregano, and garlic salt in a large bowl. Stir in chickpeas, tomatoes, cucumber, bell pepper, and olives. Stir in quinoa. Serve over spring mix. Top with cheese.
