Kale-Grapefruit Farro Salad

Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ¾ cup crumbled feta cheese
- ½ cup chopped walnuts
- 2 Tbsp honey
- 1 tsp dried crushed rosemary
Instructions
- Sprinkle chicken with salt and pepper, if desired. Cook chicken in a large skillet coated with cooking spray 5 to 6 minutes per side or until done. Remove from skillet.
- Add cheese, nuts, honey, and rosemary to skillet; toss. Cook until nuts are fragrant. Return chicken to skillet; cook just until thoroughly heated. Spoon mixture over chicken.

- 1 cup quick-cooking farro
- 3 Tbsp honey
- 2 Tbsp olive oil
- 1 Tbsp lime juice
- ¼ tsp salt
- ¼ tsp pepper
- 6 cups chopped kale
- 1 (20-oz) pkg grapefruit sections in juice
- 2 avocados, sliced
Side Dish Instructions
- Cook farro according to package directions.
- Meanwhile, combine honey, oil, lime juice, salt, and pepper in a large bowl. Add kale and farro; toss. Top with grapefruit and avocados.
