15-Minute Creamy Chicken and Broccoli Skillet

Ingredients

  • 1 lb boneless, skinless chicken thighs, cubed
  • ½ Tbsp olive oil
  • ¾ cup instant brown rice
  • 1 (12-oz) pkg broccoli florets
  • 1 (10.5-oz) can cream of mushroom soup

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
  2. Meanwhile, cook rice and broccoli according to package directions. Add broccoli and soup to skillet with chicken; cook 4 minutes or until thoroughly heated. Serve over rice.
