Creamy Tuna Pasta Salad
Apple-Arugula Salad
Ingredients
- 4 oz whole wheat penne pasta
- 2 Tbsp olive-oil mayonnaise
- 2 Tbsp sour cream
- 1 Tbsp lemon juice
- 2 Tbsp chopped fresh parsley
- ¼ tsp salt
- ¼ tsp pepper
- 1 (5-oz) can no-salt-added wild albacore tuna, drained and flaked
- ½ cup organic cannellini beans, drained and rinsed
- 1 stalk celery, chopped
Instructions
- Cook pasta according to package directions; drain and rinse with cold water.
- Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper in a large bowl. Add tuna, beans, celery, and pasta; toss. Chill until ready to serve.
Side Dish Ingredients
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 Tbsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg baby arugula
- 1 organic sweet, crisp apple, cored and sliced
Side Dish Instructions
- Whisk together vinegar, mustard, honey, oil, salt, and pepper in a large bowl; add arugula and apple. Toss.
