Creamy Tuna Pasta Salad

Ingredients

  • 4 oz whole wheat penne pasta
  • 2 Tbsp olive-oil mayonnaise
  • 2 Tbsp sour cream
  • 1 Tbsp lemon juice
  • 2 Tbsp chopped fresh parsley
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (5-oz) can no-salt-added wild albacore tuna, drained and flaked
  • ½ cup organic cannellini beans, drained and rinsed
  • 1 stalk celery, chopped

Instructions

  1. Cook pasta according to package directions; drain and rinse with cold water.
  2. Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper in a large bowl. Add tuna, beans, celery, and pasta; toss. Chill until ready to serve.

Side Dish Ingredients

  • 1 tsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (5-oz) pkg baby arugula
  • 1 organic sweet, crisp apple, cored and sliced

Side Dish Instructions

  1. Whisk together vinegar, mustard, honey, oil, salt, and pepper in a large bowl; add arugula and apple. Toss.
