Maple-Vanilla Bean Baked Pears

Ingredients
- 6 pears
- 1 tsp ground cinnamon, divided
- ½ cup pure maple syrup
- 1 vanilla bean, split and seeds scraped
- 1 cup chopped pecans
- Vanilla ice cream (optional)
Instructions
- Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper. Cut each pear in half lengthwise, and scoop out cores using a melon baller. Slice a small piece off outside of each pear half to form a base.
- Arrange pears on baking sheet; sprinkle with ½ tsp cinnamon. Stir together syrup and vanilla bean seeds. Drizzle over pears.
- Bake 25 minutes or until pears are tender and edges are slightly browned, sprinkling with nuts during last 5 minutes of baking.
- Remove pears from oven; cool slightly. Serve each with a small dollop of ice cream, if desired. Sprinkle with ½ tsp cinnamon.
