Cajun Bacon Chicken

Tomato and Bell Pepper Rice

Ingredients

  • 2 slices center cut bacon
  • ½ lb boneless, skinless chicken thighs, cubed
  • ¼ tsp Cajun seasoning
  • 1 green onion, thinly sliced

Instructions

  1. Cook bacon in a nonstick skillet over medium-high heat 6 minutes or until crisp. Drain, reserving drippings in skillet. Crumble bacon.
  2. Sprinkle chicken with seasoning. Cook in drippings 5 to 6 minutes per side or until done. Sprinkle with bacon and onion. Serve over Tomato and Bell Pepper Rice recipe, if desired.

Side Dish Ingredients

  • ½ cup instant brown rice
  • 1 yellow bell pepper, chopped
  • 1 clove garlic, minced
  • ⅛ tsp salt
  • 2 tsp olive oil
  • ½ (14.5-oz) can diced tomatoes (see Note)

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook bell pepper, garlic, and salt in hot oil in a large skillet over medium-high heat 4 to 6 minutes or until tender. Stir in tomatoes and rice; cook 3 minutes or until thoroughly heated.
