Creamy Parmesan Salmon

Ingredients

  • 2 (6-oz) salmon fillets
  • 1 Tbsp butter
  • ⅓ cup heavy cream
  • 3 Tbsp freshly grated Parmesan cheese
  • 1 tsp garlic paste
  • 1 Tbsp chopped fresh basil (or use 1 tsp dried)
  • ½ lemon, cut into wedges

Instructions

  1. Sprinkle fish lightly with salt and pepper, if desired. Cook in a small skillet coated with cooking spray 4 to 5 minutes per side or until fish flakes with a fork.
  2. Meanwhile, melt butter in a small saucepan over medium heat. Add cream, cheese, and garlic paste to pan; bring to a boil. Reduce heat, and simmer 5 minutes or until thickened. Remove from heat. Stir in basil.
  3. Serve sauce and lemon wedges with fish.

  • 1 Tbsp chopped fresh basil
  • 1 tsp garlic paste
  • ⅛ tsp salt

  1. Cook vegetable medley according to package directions. Toss together vegetables, basil, garlic paste, and salt in a bowl.
