Toasted Bean Burritos

Ingredients

  • ½ cup instant brown rice 
  • ¾ cup refried beans
  • 2 burrito-size flour tortillas
  • ½ cup black beans, drained and rinsed
  • ⅓ cup guacamole
  • ⅓ cup pico de gallo, drained
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat broiler. Cook rice according to package directions.
  2. Meanwhile, spread refried beans on tortillas. Top with black beans and rice. Fold in sides of tortillas; roll up to completely enclose filling. Place in a greased 9-inch baking dish. Broil 2 to 3 minutes or until toasted.
  3. Top burritos with guacamole, pico, and cilantro.
