Toasted Bean Burritos

Ingredients
- ½ cup instant brown rice
- ¾ cup refried beans
- 2 burrito-size flour tortillas
- ½ cup black beans, drained and rinsed
- ⅓ cup guacamole
- ⅓ cup pico de gallo, drained
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat broiler. Cook rice according to package directions.
- Meanwhile, spread refried beans on tortillas. Top with black beans and rice. Fold in sides of tortillas; roll up to completely enclose filling. Place in a greased 9-inch baking dish. Broil 2 to 3 minutes or until toasted.
- Top burritos with guacamole, pico, and cilantro.
