Garlic Mashed Potatoes and Asparagus

Ingredients

  • 6 (6-oz) salmon fillets
  • ¾ cup freshly grated Parmesan cheese
  • ⅓ cup chopped fresh parsley
  • 3 cloves garlic, minced

Instructions

  1. Preheat oven to 425°F. Place fish on a greased rimmed baking sheet; lightly sprinkle with salt. Bake 10 minutes.
  2. Combine cheese, parsley, and garlic. Top fish with cheese mixture; bake 5 minutes longer or until cheese melts and fish flakes with a fork.

  • 1½ lb asparagus, trimmed
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced and divided
  • 2 (24-oz) pkg refrigerated gluten-free mashed potatoes
  • ⅓ cup chopped fresh parsley

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together asparagus, oil, and 1 clove minced garlic on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes or until tender and lightly browned.
  3. Meanwhile, microwave mashed potatoes according to package directions. Combine potatoes with 3 cloves minced garlic in a bowl; microwave 1 minute longer. Stir in parsley.
