Parmesan-Herb Salmon
Garlic Mashed Potatoes and Asparagus
Ingredients
- 6 (6-oz) salmon fillets
- ¾ cup freshly grated Parmesan cheese
- ⅓ cup chopped fresh parsley
- 3 cloves garlic, minced
Instructions
- Preheat oven to 425°F. Place fish on a greased rimmed baking sheet; lightly sprinkle with salt. Bake 10 minutes.
- Combine cheese, parsley, and garlic. Top fish with cheese mixture; bake 5 minutes longer or until cheese melts and fish flakes with a fork.

- 1½ lb asparagus, trimmed
- 2 Tbsp olive oil
- 4 cloves garlic, minced and divided
- 2 (24-oz) pkg refrigerated gluten-free mashed potatoes
- ⅓ cup chopped fresh parsley
Side Dish Instructions
- Preheat oven to 425°F. Toss together asparagus, oil, and 1 clove minced garlic on a large rimmed baking sheet; spread in a single layer.
- Bake 15 minutes or until tender and lightly browned.
- Meanwhile, microwave mashed potatoes according to package directions. Combine potatoes with 3 cloves minced garlic in a bowl; microwave 1 minute longer. Stir in parsley.
