Veggie-Beef Sloppy Joes
Zucchini Noodles
Ingredients
- 1½ lb ground beef
- 2 carrots, chopped
- 2 bell peppers, chopped (any color)
- 1 onion, chopped
- 1 (6-oz) can tomato paste
- ¾ cup gluten-free chicken broth
- 1½ tsp Montreal steak seasoning
- 2 tsp yellow mustard
- 2 tsp apple cider vinegar
- 2 tsp molasses
Instructions
- Cook beef in a large skillet over medium heat until browned, stirring to crumble; drain. Transfer to a 5- to 7-quart slow cooker.
- Add carrots, bell peppers, and onion. Stir in tomato paste, broth, steak seasoning, mustard, vinegar, and molasses.
- Cover and cook on LOW 8 hours. Serve over Zucchini Noodles recipe.
Side Dish Ingredients
- 2 (14-oz) pkg zucchini spirals
- 2 cloves garlic, minced
- 2 Tbsp olive oil
Side Dish Instructions
- Cook zucchini, garlic, and desired amount of salt and pepper in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
