Skillet Pepperoni Mac 'n Cheese

Ingredients

  • ½ (16-oz) pkg elbow macaroni
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 1 cup milk
  • ¼ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • ⅓ cup pepperoni
  • ½ cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Cook pasta according to package directions; drain and set aside.
  2. Melt butter in a large ovenproof skillet over medium heat. Add flour; cook, whisking constantly, 2 minutes.
  3. Gradually whisk in milk until mixture is smooth. Cook, whisking constantly, 2 to 3 minutes or until thick and bubbly. Stir in pizza sauce.
  4. Gradually stir in mozzarella until melted. Add pasta and pepperoni, stirring to coat.
  5. Stir together panko and Parmesan; sprinkle over pasta.
  6. Bake 10 to 15 minutes or until hot and bubbly.

Side Dish Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1 clove garlic, minced
  • 1 Tbsp butter
  • ½ tsp Italian seasoning

Side Dish Instructions

  1. Place broccoli, garlic, butter and seasoning in a microwave-safe bowl; add 1 Tbsp water. Cover with plastic wrap, and vent one corner.
  2. Cook 3 to 4 minutes or to desired doneness. Stir in salt and pepper to taste.
