Skillet Pepperoni Mac 'n Cheese

Ingredients
- ½ (16-oz) pkg elbow macaroni
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 cup milk
- ¼ cup pizza sauce
- 1 cup shredded mozzarella cheese
- ⅓ cup pepperoni
- ½ cup panko breadcrumbs
- 1 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Cook pasta according to package directions; drain and set aside.
- Melt butter in a large ovenproof skillet over medium heat. Add flour; cook, whisking constantly, 2 minutes.
- Gradually whisk in milk until mixture is smooth. Cook, whisking constantly, 2 to 3 minutes or until thick and bubbly. Stir in pizza sauce.
- Gradually stir in mozzarella until melted. Add pasta and pepperoni, stirring to coat.
- Stir together panko and Parmesan; sprinkle over pasta.
- Bake 10 to 15 minutes or until hot and bubbly.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- 1 clove garlic, minced
- 1 Tbsp butter
- ½ tsp Italian seasoning
Side Dish Instructions
- Place broccoli, garlic, butter and seasoning in a microwave-safe bowl; add 1 Tbsp water. Cover with plastic wrap, and vent one corner.
- Cook 3 to 4 minutes or to desired doneness. Stir in salt and pepper to taste.
