Easy Chicken Burritos

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cubed
  • ½ (1-oz) envelope taco seasoning mix
  • 1 Tbsp olive oil
  • 2 burrito-size flour tortillas
  • 1 cup shredded Mexican-blend cheese
  • 1½ cups chopped romaine lettuce
  • ¼ cup sour cream
  • ¼ cup fresh salsa 

Instructions

  1. Sprinkle chicken with seasoning mix. Cook chicken in hot oil in a large skillet over medium-high heat until chicken is browned and done.
  2. Divide chicken between tortillas; top with cheese. Fold edges of tortillas in, and roll up. Top burritos with lettuce, sour cream, and salsa.

  • ¾ cup long-grain white rice
  • ½ (1-oz) envelope taco seasoning mix

Side Dish Instructions

  1. Cook rice according to package directions, adding seasoning mix to water before cooking.
