Warm Greek Pasta Salad

Ingredients

  • ½ (16-oz) pkg spaghetti
  • 1 zucchini, thinly sliced
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • ½ (10-oz) pkg spinach
  • 1 cup grape tomatoes, halved
  • ½ cup lemon vinaigrette
  • ½ (6-oz) pkg crumbled feta cheese

Instructions

  1. Cook pasta according to package directions; drain and place in a large bowl.
  2. Meanwhile, cook zucchini, onions, and garlic in hot oil in a large skillet over medium-high heat until zucchini is crisp-tender. Gradually stir in spinach and tomatoes, stirring until spinach is wilted.
  3. Add zucchini mixture to pasta along with vinaigrette; toss. Sprinkle with cheese.
