Warm Greek Pasta Salad
Ingredients
- ½ (16-oz) pkg spaghetti
- 1 zucchini, thinly sliced
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- ½ (10-oz) pkg spinach
- 1 cup grape tomatoes, halved
- ½ cup lemon vinaigrette
- ½ (6-oz) pkg crumbled feta cheese
Instructions
- Cook pasta according to package directions; drain and place in a large bowl.
- Meanwhile, cook zucchini, onions, and garlic in hot oil in a large skillet over medium-high heat until zucchini is crisp-tender. Gradually stir in spinach and tomatoes, stirring until spinach is wilted.
- Add zucchini mixture to pasta along with vinaigrette; toss. Sprinkle with cheese.
