Easy Chickpea Tikka Masala

Ingredients
- ½ onion, chopped
- 1 (15-oz) can chickpeas, drained and rinsed
- ½ (15-oz) jar tikka masala simmer sauce
- 1 (3.5-oz) pouch boil-in-bag basmati rice
- ¾ cup cashews
- 3 Tbsp chopped fresh cilantro (optional)
Instructions
- Cook onion in a saucepan or Dutch oven coated with cooking spray over medium-high heat 5 minutes or until tender.
- Add chickpeas and simmer sauce; reduce heat to medium, and simmer 10 minutes, stirring occasionally.
- Meanwhile, cook rice according to package directions. Serve chickpea mixture over rice; sprinkle with nuts and, if desired, cilantro.
