Lemon-Rosemary Chicken Thighs
Balsamic-Roasted Broccolini
Ingredients
- 2 cloves garlic, minced
- 2 Tbsp fresh lemon juice
- 1 Tbsp chopped fresh rosemary
- 2 Tbsp avocado oil
- 1 lb boneless, skinless chicken thighs
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Combine garlic, lemon juice, rosemary, and oil in a small bowl. Pour over chicken in a large zip-top plastic bag; seal and chill 1 hour.
- Sprinkle chicken with salt and pepper. Cook in a grill pan or cast-iron skillet over medium-high heat 5 to 7 minutes per side or until done.

- 1 lb Broccolini (or use broccoli florets)
- 1 Tbsp avocado oil
- 1 Tbsp balsamic vinegar
- 1 clove garlic, minced
Side Dish Instructions
- Preheat oven to 450°F. Trim ends of Broccolini.
- Toss together Broccolini, oil, vinegar, garlic, and desired amount of salt and pepper in a large bowl. Spread in a single layer on a rimmed baking sheet.
- Bake 5 to 10 minutes or until browned and tender.
