Tuna-Couscous Salad
Easy Steamed Asparagus
Ingredients
- ½ cup whole wheat pearl couscous
- 1 cup baby arugula
- 12 pitted kalamata olives, coarsely chopped
- ½ cup grape tomatoes, quartered
- ½ cup diced cucumber
- 2 Tbsp chopped fresh basil
- 1 Tbsp extra virgin olive oil
- 1 Tbsp apple cider vinegar
- 1 clove garlic, minced
- 1 (2.6-oz) pouch low-sodium chunk light tuna in water
Instructions
- Cook couscous according to package directions. Drain and rinse under cold water.
- Toss together couscous, arugula, and remaining ingredients in a serving bowl; divide between 2 serving plates.
Side Dish Ingredients
- ½ lb asparagus, trimmed
- 1½ tsp balsamic vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Wrap asparagus in damp paper towels. Microwave asparagus in a microwave-safe dish at HIGH power 3 to 4 minutes or until crisp-tender.
- Drain and rinse asparagus under cold water. Drizzle with vinegar, and sprinkle with salt and pepper.
