Tuna-Couscous Salad

Ingredients

  • ½ cup whole wheat pearl couscous
  • 1 cup baby arugula
  • 12 pitted kalamata olives, coarsely chopped
  • ½ cup grape tomatoes, quartered
  • ½ cup diced cucumber
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp apple cider vinegar
  • 1 clove garlic, minced
  • 1 (2.6-oz) pouch low-sodium chunk light tuna in water

Instructions

  1. Cook couscous according to package directions. Drain and rinse under cold water.
  2. Toss together couscous, arugula, and remaining ingredients in a serving bowl; divide between 2 serving plates.

Side Dish Ingredients

  • ½ lb asparagus, trimmed
  • 1½ tsp balsamic vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Wrap asparagus in damp paper towels. Microwave asparagus in a microwave-safe dish at HIGH power 3 to 4 minutes or until crisp-tender.
  2. Drain and rinse asparagus under cold water. Drizzle with vinegar, and sprinkle with salt and pepper.
