Sheet Pan Chicken Tikka Masala
Ingredients
- 1 (8-oz) boneless, skinless chicken breast, halved lengthwise
- ½ cup tikka masala sauce
- 1 cup quartered petite potatoes
- 1 cup cubed sweet potatoes
- 1 cup cauliflower florets
- 1 Tbsp olive oil
- ½ tsp ground cumin
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- ¼ cup 2% reduced-fat plain Greek yogurt
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 425°F. Toss together chicken and tikka sauce in a medium bowl; let stand 5 minutes.
- Toss together both potatoes, cauliflower, oil, cumin, salt, and pepper over a rimmed baking sheet; spread in a single layer, and top with chicken. Drizzle any remaining sauce over chicken.
- Bake 20 to 25 minutes or until chicken is done and potatoes are tender. Serve with yogurt and cilantro.
