Sheet Pan Chicken Tikka Masala

Ingredients

  • 1 (8-oz) boneless, skinless chicken breast, halved lengthwise
  • ½ cup tikka masala sauce
  • 1 cup quartered petite potatoes
  • 1 cup cubed sweet potatoes
  • 1 cup cauliflower florets
  • 1 Tbsp olive oil
  • ½ tsp ground cumin
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • ¼ cup 2% reduced-fat plain Greek yogurt
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F. Toss together chicken and tikka sauce in a medium bowl; let stand 5 minutes.
  2. Toss together both potatoes, cauliflower, oil, cumin, salt, and pepper over a rimmed baking sheet; spread in a single layer, and top with chicken. Drizzle any remaining sauce over chicken.
  3. Bake 20 to 25 minutes or until chicken is done and potatoes are tender. Serve with yogurt and cilantro.
