Shakshuka Arrabbiata (Poached Eggs in Spicy Tomato Sauce)

Ingredients
- 1 lb ground pork (or use ground beef or chicken)
- 1 red bell pepper, chopped
- 2 cloves garlic, crushed
- 1 (24-oz) jar fire-roasted marinara sauce (see Note)
- ⅓ cup water
- 6 large eggs
- 1 cup arugula
- 2 avocados, sliced
- ¼ cup freshly grated Parmesan cheese
Instructions
- Cook pork in a large skillet over medium-high heat 4 to 6 minutes or until crumbly; add bell pepper and garlic. Cook 5 minutes or until pork is done.
- Stir in sauce and water; reduce heat and simmer 3 minutes.
- Make 6 wells in mixture, and carefully crack an egg into each well. Cover and cook 5 to 8 minutes or until egg whites are set. Serve topped with arugula, avocado, and cheese.
