Ingredients

  • 1 (10-oz) pkg baby spinach (or use baby kale)
  • ½ cup thinly sliced red onion
  • ¾ cup balsamic vinaigrette
  • 6 hard-cooked eggs, quartered 
  • 2 (8-oz) pkg steamed baby beets, quartered
  • ¾ cup crumbled blue cheese (or use feta)
  • ¾ cup coarsely chopped walnuts 

Instructions

  1. Toss together spinach, onion, and vinaigrette in a bowl. Top with eggs, beets, cheese, and nuts.
