Ingredients
- 1 (10-oz) pkg baby spinach (or use baby kale)
- ½ cup thinly sliced red onion
- ¾ cup balsamic vinaigrette
- 6 hard-cooked eggs, quartered
- 2 (8-oz) pkg steamed baby beets, quartered
- ¾ cup crumbled blue cheese (or use feta)
- ¾ cup coarsely chopped walnuts
Instructions
- Toss together spinach, onion, and vinaigrette in a bowl. Top with eggs, beets, cheese, and nuts.
