Beef Taco Lettuce Wraps

Ingredients

  • 2 lb ground beef (or use ground chicken or turkey)
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 Tbsp chili powder
  • 1 tsp ground coriander
  • 1 (14.5-oz) can diced tomatoes, drained
  • ¼ cup chopped fresh cilantro
  • 2 romaine lettuce hearts, leaves separated
  • 4 radishes, thinly sliced
  • 1 (16-oz) container guacamole 

Instructions

  1. Cook beef, onion, bell pepper, and garlic in hot oil in a large deep skillet over medium-high heat until beef is browned and crumbly.
  2. Stir in chili powder, coriander, tomatoes, and cilantro; cook 4 minutes or until thoroughly heated.
  3. Arrange lettuce in stacks of 2 leaves each; fill with beef mixture. Top with radishes and guacamole.
