Beef Taco Lettuce Wraps
Ingredients
- 2 lb ground beef (or use ground chicken or turkey)
- 1 onion, chopped
- 1 red bell pepper, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 Tbsp chili powder
- 1 tsp ground coriander
- 1 (14.5-oz) can diced tomatoes, drained
- ¼ cup chopped fresh cilantro
- 2 romaine lettuce hearts, leaves separated
- 4 radishes, thinly sliced
- 1 (16-oz) container guacamole
Instructions
- Cook beef, onion, bell pepper, and garlic in hot oil in a large deep skillet over medium-high heat until beef is browned and crumbly.
- Stir in chili powder, coriander, tomatoes, and cilantro; cook 4 minutes or until thoroughly heated.
- Arrange lettuce in stacks of 2 leaves each; fill with beef mixture. Top with radishes and guacamole.
