Ranch Mashed Potatoes

Ingredients

  • 1 (5-lb) pkg red potatoes, cut into 1-inch pieces
  • 1 (8-oz) block cream cheese, softened
  • ¼ cup butter, softened
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 (8-oz) carton sour cream
  • 1 (1-oz) envelope Ranch dressing mix

Instructions

  1. Combine potatoes and water to cover in a large pot; bring to a boil over medium-high heat. Reduce heat, and simmer 15 minutes or until potatoes are very tender.
  2. Drain and return to pan. Add cream cheese and butter; mash with a potato masher to desired consistency.
  3. Stir in cheese, sour cream, and Ranch dressing mix.
  4. Cook, stirring constantly, over low heat until potatoes are thoroughly heated.
