Praline-Topped Sweet Potato Casserole

Ingredients

  • 5 lb sweet potatoes
  • ½ cup sugar
  • ½ cup milk
  • ½ cup butter, melted
  • 3 large eggs, beaten
  • ½ tsp salt
  • Praline Topping:
  • 1 cup packed brown sugar
  • ⅓ cup all-purpose flour
  • ⅓ cup quick-cooking oats
  • ¼ cup butter, cut into pieces
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 400°F. Place sweet potatoes on a rimmed baking sheet; bake 40 to 50 minutes or until potatoes are fork tender.
  2. Let stand until cool enough to handle; peel potatoes, and place potato pulp in a large bowl.
  3. Add sugar, milk, melted butter, eggs, and salt; mash with a potato masher until combined but still chunky.
  4. Spoon mixture into a lightly greased 13- x 9-inch baking dish; sprinkle with Praline Topping. Bake 30 to 45 minutes or until hot and bubbly.
  5. For Topping: Stir together brown sugar, flour, and oats in a small bowl. Cut in butter using a pastry blender or fork until mixture is crumbly; stir in nuts.
