Kid-Friendly Skillet Spinach Pie

Ingredients

  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1½ (5-oz) pkg baby spinach
  • 1 Tbsp all-purpose flour
  • ½ cup heavy cream (or use milk)
  • 1½ cups chopped rotisserie chicken
  • ¼ cup crumbled feta cheese
  • 1 Tbsp chopped fresh dill
  • 5 frozen phyllo sheets, thawed (keep sheets covered with a damp towel)
  • ¼ cup butter, melted

Instructions

  1. Preheat oven to 375°F. Sauté garlic in hot oil in a small ovenproof skillet over medium heat until fragrant. Gradually stir in spinach, and cook until wilted.
  2. Stir in flour; cook, stirring constantly, 1 minute. Add cream; bring to a boil, reduce heat, and simmer 3 minutes. Stir in chicken, cheese, and dill. Cool slightly. Season with salt and pepper to taste.
  3. Place one sheet of phyllo on a flat surface; brush with butter. Layer with remaining phyllo one sheet at a time, brushing with butter between layers. Cut into desired shapes (or see Note), and arrange over spinach mixture in skillet. Trim to fit.
  4. Bake 20 to 25 minutes or until golden brown.
