15-Minute Pesto Shrimp Gnocchi

Ingredients

  • 3 Tbsp butter
  • 1 (9-oz) pkg gnocchi
  • ¾ lb peeled and deveined, large raw shrimp
  • ½ cup pesto
  • ¼ cup low-sodium chicken broth

Instructions

  1. Melt butter in a large skillet over medium-high heat. Spread gnocchi in a single layer, and toast, stirring occasionally, 8 minutes or until lightly browned.
  2. Meanwhile, cook shrimp in a large skillet coated with cooking spray over medium-high heat 3 minutes. Add pesto and broth; cook until shrimp turn pink and sauce is thoroughly heated. Serve over gnocchi.
