Cajun Rémoulade Grouper Sandwiches

Ingredients
- 6 (6-oz) grouper fillets (or use another firm, white fish)
- 2 Tbsp olive oil
- ¾ tsp kosher salt
- ½ tsp pepper
- 6 hamburger buns (preferably whole wheat)
- ½ cup organic olive-oil mayonnaise
- 1 Tbsp Dijon mustard
- 1 Tbsp fresh lemon juice
- 1 Tbsp capers, minced
- 1 small clove garlic, minced
- ½ tsp smoked paprika
Instructions
- Preheat grill to medium-high heat. Brush fish with oil; sprinkle with salt and pepper.
- Grill fish, covered, 4 minutes per side or until fish flakes with a fork. Grill buns, cut sides down, 1 minute or until well marked.
- Stir together mayonnaise, mustard, lemon juice, capers, garlic, and paprika. Spread on cut sides of buns. Serve fish on buns.
