Roasted Cod with Green Olives and Tomatoes

Ingredients

  • ¾ lb cod fillets
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ cup pitted green olives, drained
  • 1 cup organic grape tomatoes

Instructions

  1. Preheat oven to 375°F. Place fish in a lightly greased 8- x 8-inch pan; drizzle with oil, and sprinkle with salt. Nestle olives and tomatoes around fish.
  2. Bake 15 to 20 minutes or until fish flakes with a fork; serve fish and pan sauce over orzo.

  • ½ cup whole wheat orzo
  • 1 tsp olive oil
  • ½ tsp lemon zest
  • 2 tsp fresh lemon juice
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Cook orzo according to package directions; drain and transfer to a bowl. Stir in oil, lemon zest and juice, Italian seasoning, salt, and pepper.
