Roasted Cod with Green Olives and Tomatoes
Lemon-Herb Orzo
Ingredients
- ¾ lb cod fillets
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ cup pitted green olives, drained
- 1 cup organic grape tomatoes
Instructions
- Preheat oven to 375°F. Place fish in a lightly greased 8- x 8-inch pan; drizzle with oil, and sprinkle with salt. Nestle olives and tomatoes around fish.
- Bake 15 to 20 minutes or until fish flakes with a fork; serve fish and pan sauce over orzo.

- ½ cup whole wheat orzo
- 1 tsp olive oil
- ½ tsp lemon zest
- 2 tsp fresh lemon juice
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook orzo according to package directions; drain and transfer to a bowl. Stir in oil, lemon zest and juice, Italian seasoning, salt, and pepper.
