Buffalo Chicken Nuggets with Blue Cheese Sauce

Ingredients

  • 1 (6-oz) boneless, skinless chicken breast, cut into 2-inch pieces
  • 1 large egg, lightly beaten
  • ½ cup whole wheat flour
  • 2 Tbsp hot sauce
  • 2 Tbsp butter, melted
  • ¼ cup plain Greek yogurt
  • 2 Tbsp crumbled blue cheese
  • 2 tsp whole milk

Instructions

  1. Preheat oven to 400°F. Toss together chicken and egg in a large bowl. Place flour in a large zip-top plastic bag. Add chicken; seal and shake to coat.
  2. Arrange chicken on a greased wire rack on a foil-lined rimmed baking sheet. Coat with cooking spray.
  3. Bake 18 to 20 minutes or until chicken is done.
  4. Combine hot sauce and butter; drizzle over chicken. Stir together yogurt, cheese, and milk; serve sauce with chicken.

Side Dish Ingredients

  • 1 sweet potato, cut into wedges
  • 1 Tbsp olive oil
  • 1 tsp chopped fresh rosemary (or use 1 Tbsp dried)
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Combine potatoes, oil, rosemary, salt, and pepper on a greased rimmed baking sheet. Bake 25 minutes or until browned and tender.
