Buffalo Chicken Nuggets with Blue Cheese Sauce
Rosemary Sweet Potato Fries
Ingredients
- 1 (6-oz) boneless, skinless chicken breast, cut into 2-inch pieces
- 1 large egg, lightly beaten
- ½ cup whole wheat flour
- 2 Tbsp hot sauce
- 2 Tbsp butter, melted
- ¼ cup plain Greek yogurt
- 2 Tbsp crumbled blue cheese
- 2 tsp whole milk
Instructions
- Preheat oven to 400°F. Toss together chicken and egg in a large bowl. Place flour in a large zip-top plastic bag. Add chicken; seal and shake to coat.
- Arrange chicken on a greased wire rack on a foil-lined rimmed baking sheet. Coat with cooking spray.
- Bake 18 to 20 minutes or until chicken is done.
- Combine hot sauce and butter; drizzle over chicken. Stir together yogurt, cheese, and milk; serve sauce with chicken.
Side Dish Ingredients
- 1 sweet potato, cut into wedges
- 1 Tbsp olive oil
- 1 tsp chopped fresh rosemary (or use 1 Tbsp dried)
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Combine potatoes, oil, rosemary, salt, and pepper on a greased rimmed baking sheet. Bake 25 minutes or until browned and tender.
