Southwest Burgers with Guacamole
Roasted Zucchini Wedges
Ingredients
- 1½ lb ground beef
- 1 Tbsp Southwest seasoning (or use fajita seasoning)
- 1¼ tsp garlic salt, divided
- ¼ tsp pepper
- 1 avocado
- 1 Tbsp lime juice
- 4 large iceberg lettuce leaves
Instructions
- Preheat grill to medium-high heat. Gently mix beef, Southwest seasoning, 1 tsp garlic salt, and pepper in a bowl; shape into 4 patties.
- Grill, covered, 6 minutes per side or until no longer pink.
- Mash avocado with a fork until chunky. Add lime juice and ¼ tsp garlic salt. Mix well.
- Serve burgers on lettuce leaves with guacamole.

- 2 zucchini, cut into wedges
- 2 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet.
- Bake 15 to 20 minutes or until tender, stirring once.
