Italian Sausage and Spinach Soup

Ingredients

  • ¾ lb ground Italian pork sausage
  • 2 Tbsp olive oil
  • 4 cups unsalted chicken broth
  • 1 cup water
  • ½ (14.5-oz) can no-salt-added fire-roasted diced tomatoes
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp dried oregano
  • ½ tsp salt
  • 1 (5-oz) pkg baby spinach
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Cook sausage in hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Transfer sausage and drippings to a 5- or 6-quart slow cooker. Stir in broth, water, tomatoes, onion, garlic, oregano, and salt.
  2. Cover and cook on LOW 8 hours. Add spinach just before serving, stirring until just wilted. Sprinkle with cheese.
